  • 1 tbsp olive oil
  • 1 onion chopped
  • 3 cloves garlic minced
  • 1 lb lean ground beef or ground turkey
  • 1 medium green cabbage chopped
  • 3 carrots sliced
  • 1 cup uncooked rice
  • 28 oz crushed tomatoes
  • 6 cups beef or vegetable broth
  • 1 tbsp tomato paste
  • 1 tsp paprika
  • 1 tsp dried oregano
  • 1 bay leaf
  • salt and pepper to taste

Method
 

  1. Heat olive oil in a large pot over medium heat. Add the onion and garlic and sauté for 3–4 minutes until fragrant.
  2. Add the ground beef or turkey and cook until browned, breaking it apart with a spoon.
  3. Stir in the chopped cabbage and carrots, cooking for 5 minutes until slightly softened.
  4. Add the uncooked rice, crushed tomatoes, broth, tomato paste, paprika, oregano, and bay leaf. Mix well.
  5. Bring the soup to a boil, then reduce heat to low. Cover and simmer for 25–30 minutes, or until the rice is tender and the cabbage is fully cooked.
  6. Season with salt and pepper to taste. Remove the bay leaf before serving.
  7. Ladle into bowls and enjoy the warm, hearty flavors reminiscent of classic cabbage rolls.
