- Heat olive oil in a large pot over medium heat. Add the onion and garlic and sauté for 3–4 minutes until fragrant.
- Add the ground beef or turkey and cook until browned, breaking it apart with a spoon.
- Stir in the chopped cabbage and carrots, cooking for 5 minutes until slightly softened.
- Add the uncooked rice, crushed tomatoes, broth, tomato paste, paprika, oregano, and bay leaf. Mix well.
- Bring the soup to a boil, then reduce heat to low. Cover and simmer for 25–30 minutes, or until the rice is tender and the cabbage is fully cooked.
- Season with salt and pepper to taste. Remove the bay leaf before serving.
- Ladle into bowls and enjoy the warm, hearty flavors reminiscent of classic cabbage rolls.
