  • 700 g ground beef
  • 2 tbsp olive oil
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 chipotle peppers in adobo sauce, minced (alcohol-free)
  • 2 tbsp adobo sauce from the peppers
  • 2 tbsp tomato paste
  • 400 g diced tomatoes (canned)
  • 400 g red kidney beans, drained and rinsed
  • 400 g black beans, drained and rinsed
  • 2 cups beef broth
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 0.5 tsp oregano
  • salt and black pepper to taste
  • 1 cup shredded cheddar cheese
  • 2 tbsp chopped cilantro

Method
 

  1. Heat the olive oil in a large pot over medium-high heat. Add the ground beef and cook for 5–7 minutes, breaking it apart until browned.
  2. Add the onion, garlic, and bell peppers. Sauté for 4–5 minutes until softened.
  3. Stir in tomato paste, chipotle peppers, and adobo sauce, cooking for 2 minutes to develop flavor.
  4. Add diced tomatoes, kidney beans, black beans, and beef broth. Mix well.
  5. Season with smoked paprika, cumin, chili powder, oregano, salt, and black pepper.
  6. Bring the chili to a boil, then reduce the heat and simmer uncovered for 25–30 minutes, stirring occasionally.
  7. Stir in the shredded cheddar cheese until melted and incorporated.
  8. Remove from heat and sprinkle with fresh cilantro before serving. Enjoy with rice, cornbread, or tortilla chips.

Notes

For extra smokiness, add an additional teaspoon of adobo sauce or smoked paprika.
