Ingredients
  

Crust
  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup butter melted
Peanut Butter Layer
  • 1 cup creamy peanut butter
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
Chocolate Topping
  • 1 1/2 cups semi-sweet chocolate chips
  • 2 tablespoons coconut oil or butter

Method
 

  1. Line an 8x8-inch baking dish with parchment paper, leaving overhang for easy removal.
  2. Combine graham cracker crumbs and melted butter until evenly moistened.
  3. Press mixture firmly into the bottom of the dish to form an even crust.
  4. Mix peanut butter, powdered sugar, and vanilla extract until smooth and creamy.
  5. Spread the peanut butter mixture evenly over the crust.
  6. Melt chocolate chips with coconut oil over low heat, stirring until smooth.
  7. Pour melted chocolate evenly over peanut butter layer and spread gently.
  8. Refrigerate for at least 2 hours, or until fully set.
  9. Lift out using parchment, slice into bars, and serve chilled or room temperature.

Notes

For a variation, swirl in a little extra peanut butter into the melted chocolate before chilling.
