Main Ingredients
  • 1 large head of cauliflower cut into florets
  • 2 cloves garlic peeled
  • 2 tbsp unsalted butter
  • 1/4 cup heavy cream or milk for a lighter option
  • 1/4 cup grated Parmesan cheese optional
  • 1/2 tsp salt to taste
  • 1/4 tsp black pepper
  • fresh chives or parsley for garnish (optional)

Method
 

  1. Bring a large pot of salted water to a boil. Add cauliflower florets and garlic cloves. Cook for 10–12 minutes, until the cauliflower is very tender.
  2. Drain well and pat dry with paper towels to remove excess moisture.
  3. Transfer the cauliflower and garlic to a food processor. Add butter, cream, Parmesan (if using), salt, and pepper.
  4. Blend until completely smooth and creamy, scraping down the sides as needed. Adjust seasoning to taste.
  5. Transfer to a serving bowl, garnish with fresh herbs or a drizzle of melted butter, and serve warm.

Notes

For a dairy-free version, substitute olive oil for butter and use unsweetened almond milk instead of cream. Add roasted garlic for extra depth of flavor!
