  • 2 cups creamy peanut butter
  • 1 cup unsalted butter
  • 1 tsp vanilla extract
  • 4 cups powdered sugar sifted
  • 1/4 tsp salt
  • crushed peanuts optional, for topping

Method
 

  1. Line an 8x8-inch pan with parchment paper, leaving extra over the sides for easy lifting.
  2. In a medium saucepan over low heat, melt the butter completely.
  3. Add the peanut butter and stir until smooth and fully combined with the melted butter. Remove from heat.
  4. Stir in the vanilla extract and salt.
  5. Gradually add the powdered sugar, mixing until the fudge becomes thick and smooth with no lumps.
  6. Transfer the mixture into the prepared pan and press evenly with a spatula.
  7. Sprinkle with crushed peanuts if desired, gently pressing them into the surface.
  8. Refrigerate for at least 2 hours, or until firm.
  9. Lift from the pan and cut into squares before serving.

Notes

For a chocolate-peanut butter twist, swirl in melted chocolate before chilling. Store your fudge in the fridge for the best texture.
