Ingredients
  

Root Vegetables
  • 2 carrots peeled and cut into chunks
  • 2 parsnips peeled and cut into chunks
  • 1 sweet potato peeled and cubed
  • 1 red onion cut into wedges
Seasoning
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper freshly ground
  • 1 tsp dried thyme

Method
 

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Place the carrots, parsnips, sweet potato, and red onion in a large bowl.
  3. Drizzle with olive oil, then sprinkle with salt, pepper, and thyme. Toss to coat evenly.
  4. Spread the vegetables evenly on the prepared baking sheet in a single layer.
  5. Roast for 35–40 minutes, stirring halfway through, until tender and golden brown.
  6. Serve warm and enjoy!

Notes

You can mix in other root vegetables like turnips or beets. Adjust the roasting time slightly depending on the size of your chunks.
