- Preheat oven to 375°F (190°C). Place the pre-baked pie crust into a 9-inch pie dish.
- In a skillet over medium heat, melt the butter. Add onions, green peppers, and garlic; sauté until softened.
- Add the chopped shrimp and cook for 2–3 minutes, just until pink. Remove from heat and let cool slightly.
- In a mixing bowl, combine mayonnaise, sour cream, cheddar cheese, Old Bay seasoning, pepper, and beaten eggs. Stir in the shrimp mixture until well blended.
- Pour the filling into the pie crust and spread evenly.
- Bake for 30–35 minutes or until the top is golden brown and the center is set.
- Allow to cool for 10 minutes before slicing. Garnish with parsley or lemon wedges if desired.
