Ingredients
  

Crust
  • 1 refrigerated pie crust or homemade, pre-baked
Filling
  • 1 tbsp butter
  • 1/2 cup chopped onion
  • 1/2 cup chopped green pepper
  • 1 clove garlic minced
  • 1 lb medium shrimp peeled, deveined, and chopped
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 tsp Old Bay seasoning
  • 1/4 tsp black pepper
  • 2 large eggs lightly beaten

Method
 

  1. Preheat oven to 375°F (190°C). Place the pre-baked pie crust into a 9-inch pie dish.
  2. In a skillet over medium heat, melt the butter. Add onions, green peppers, and garlic; sauté until softened.
  3. Add the chopped shrimp and cook for 2–3 minutes, just until pink. Remove from heat and let cool slightly.
  4. In a mixing bowl, combine mayonnaise, sour cream, cheddar cheese, Old Bay seasoning, pepper, and beaten eggs. Stir in the shrimp mixture until well blended.
  5. Pour the filling into the pie crust and spread evenly.
  6. Bake for 30–35 minutes or until the top is golden brown and the center is set.
  7. Allow to cool for 10 minutes before slicing. Garnish with parsley or lemon wedges if desired.

Notes

Use fresh local shrimp for the best flavor. This pie pairs beautifully with a crisp salad or roasted vegetables.
