- In a blender, combine cottage cheese, eggs, olive oil, honey, and warm milk. Blend until smooth and creamy.
- In a large mixing bowl, whisk together flour, instant yeast, salt, and baking powder.
- Pour the blended mixture into the dry ingredients and mix with a wooden spoon until a shaggy dough forms.
- Knead the dough on a lightly floured surface for 6–8 minutes until soft, smooth, and elastic.
- Place the dough in a greased bowl, cover, and let rise in a warm spot for 1 hour or until doubled in size.
- Punch down the dough and shape it into a loaf. Transfer to a greased loaf pan.
- Cover and let rise again for 30–40 minutes.
- Preheat oven to 350°F (175°C). Brush the top with melted butter and sprinkle sesame seeds if desired.
- Bake for 30–35 minutes, or until golden and the loaf sounds hollow when tapped.
- Allow to cool for at least 20 minutes before slicing.
Notes
For an extra-soft loaf, replace 2 tablespoons of milk with melted butter. This bread also freezes well.
