  • 1 cup cottage cheese
  • 2 large eggs
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 1 cup warm milk
  • 3 cups all-purpose flour
  • 2 teaspoons instant yeast
  • 1 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 tablespoon sesame seeds optional
  • 1 tablespoon melted butter for brushing

Method
 

  1. In a blender, combine cottage cheese, eggs, olive oil, honey, and warm milk. Blend until smooth and creamy.
  2. In a large mixing bowl, whisk together flour, instant yeast, salt, and baking powder.
  3. Pour the blended mixture into the dry ingredients and mix with a wooden spoon until a shaggy dough forms.
  4. Knead the dough on a lightly floured surface for 6–8 minutes until soft, smooth, and elastic.
  5. Place the dough in a greased bowl, cover, and let rise in a warm spot for 1 hour or until doubled in size.
  6. Punch down the dough and shape it into a loaf. Transfer to a greased loaf pan.
  7. Cover and let rise again for 30–40 minutes.
  8. Preheat oven to 350°F (175°C). Brush the top with melted butter and sprinkle sesame seeds if desired.
  9. Bake for 30–35 minutes, or until golden and the loaf sounds hollow when tapped.
  10. Allow to cool for at least 20 minutes before slicing.

Notes

For an extra-soft loaf, replace 2 tablespoons of milk with melted butter. This bread also freezes well.
