Fluffy Cottage Cheese Cloud Bread

Ingredients
  

  • 1 cup cottage cheese
  • 3 large eggs separated
  • 1 tbsp honey
  • 1 tsp lemon juice
  • 1/2 tsp baking powder
  • 1/4 tsp salt

Method
 

  1. Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper.
  2. In a blender or food processor, blend the cottage cheese until completely smooth and creamy.
  3. In a mixing bowl, whisk the egg yolks, honey, lemon juice, salt, and blended cottage cheese until well combined.
  4. In a separate bowl, beat the egg whites and baking powder with an electric mixer until stiff peaks form.
  5. Gently fold the whipped egg whites into the cottage cheese mixture, taking care not to deflate the fluffiness.
  6. Scoop the batter into 6–8 round clouds on the prepared baking sheet.
  7. Bake for 25–30 minutes, or until golden and lightly crisp around the edges.
  8. Let cool for 5 minutes before removing from the tray. Enjoy warm or cooled.

Notes

For extra flavor, add vanilla extract or sprinkle with cinnamon before baking.
