Method
- Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper.
- In a blender or food processor, blend the cottage cheese until completely smooth and creamy.
- In a mixing bowl, whisk the egg yolks, honey, lemon juice, salt, and blended cottage cheese until well combined.
- In a separate bowl, beat the egg whites and baking powder with an electric mixer until stiff peaks form.
- Gently fold the whipped egg whites into the cottage cheese mixture, taking care not to deflate the fluffiness.
- Scoop the batter into 6–8 round clouds on the prepared baking sheet.
- Bake for 25–30 minutes, or until golden and lightly crisp around the edges.
- Let cool for 5 minutes before removing from the tray. Enjoy warm or cooled.
Notes
For extra flavor, add vanilla extract or sprinkle with cinnamon before baking.
