Ingredients

Roll Ups
  • 4 large flour tortillas
  • 8 oz thinly sliced roast beef
  • 4 slices provolone cheese
  • 1 tbsp butter for searing
Au Jus Dip
  • 1 cup beef broth low sodium preferred
  • 1 tsp Worcestershire sauce
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder

Equipment

  • Skillet
  • Tongs
  • Small saucepan

Method

  1. In a small saucepan, combine beef broth, Worcestershire sauce, garlic powder, and onion powder. Bring to a simmer and cook for 5 minutes. Reserve for dipping.
  2. Lay out tortillas and top each with slices of roast beef and a slice of provolone cheese.
  3. Roll each tortilla tightly, securing the seam side down.
  4. Heat butter in a skillet over medium heat. Place roll ups seam-side down and cook until golden brown and cheese is melted, turning occasionally.
  5. Serve immediately with warm au jus for dipping.

Notes

For extra flavor, try adding sautéed onions or a little horseradish sauce inside the roll ups before cooking.
