Glazed Salmon with Garlic Butter Potatoes & Cheesy Asparagus

Ingredients
  

Glazed Salmon
  • 4 fillets salmon about 6 oz each, skin-on
  • 3 tbsp honey
  • 2 tbsp soy sauce low-sodium
  • 1 tbsp lemon juice freshly squeezed
  • 2 cloves garlic minced
  • 1 tbsp olive oil
Garlic Butter Potatoes
  • 1 1/2 lb baby potatoes halved
  • 2 tbsp butter melted
  • 2 cloves garlic minced
  • 1/2 tsp salt to taste
  • 1/4 tsp black pepper
Cheesy Asparagus
  • 1 lb fresh asparagus trimmed
  • 1 tbsp olive oil
  • 1/2 cup shredded mozzarella cheese
  • 2 tbsp Parmesan cheese grated

Method
 

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a small bowl, whisk together honey, soy sauce, lemon juice, garlic, and olive oil. Set aside for the salmon glaze.
  3. Place salmon fillets on the prepared baking sheet and brush generously with the glaze. Bake for 12–15 minutes, or until salmon is cooked through and caramelized on top.
  4. Meanwhile, toss the halved potatoes with melted butter, garlic, salt, and pepper. Roast on another baking sheet for 25–30 minutes until golden and tender.
  5. For the asparagus, drizzle with olive oil, sprinkle with mozzarella and Parmesan, then bake for 10 minutes or until cheese is melted and bubbly.
  6. Serve the glazed salmon with garlic butter potatoes and cheesy asparagus on the side. Garnish with fresh parsley or lemon slices if desired.

Notes

For extra crispiness, broil the salmon for 1–2 minutes at the end. Add a pinch of red pepper flakes to the glaze for a little heat!
