Gnocchi with Pomodoro Sauce

Ingredients
  

Pomodoro Gnocchi
  • 1 lb potato gnocchi
  • 2 tbsp olive oil
  • 1 small onion finely chopped
  • 3 cloves garlic minced
  • 14 oz crushed tomatoes
  • 1 cup cherry tomatoes halved
  • 1 tsp dried oregano
  • 1/2 tsp sugar
  • 1/4 cup fresh basil chopped
  • salt and pepper to taste
  • grated parmesan or pecorino cheese optional, for serving

Method
 

  1. Bring a large pot of salted water to a boil.
  2. Add the gnocchi and cook until they float, about 2–3 minutes. Drain and set aside.
  3. Heat olive oil in a saucepan over medium heat and sauté the onion for 3–4 minutes until soft.
  4. Add garlic and cook for 1 minute until fragrant.
  5. Add crushed tomatoes, cherry tomatoes, oregano, and sugar. Stir and simmer for 10–12 minutes.
  6. Season with salt and pepper, then stir in the fresh basil.
  7. Add the cooked gnocchi to the sauce and toss to coat.
  8. Cook for 2–3 minutes to let the flavors meld, then serve with optional grated cheese.

Notes

For extra flavor, add a pinch of chili flakes or a splash of pasta cooking water to adjust the sauce consistency.
