Method
- Heat olive oil in a skillet over medium heat. Add ground beef and cook until browned, breaking it apart as it cooks.
- Add garlic, oregano, cumin, salt, and pepper. Cook for 2–3 more minutes until fragrant. Remove from heat and set aside.
- In a blender or food processor, combine roasted red peppers, Greek yogurt, lemon juice, and garlic. Blend until smooth to make the sauce.
- Warm the flatbreads or pita wraps. Spread a generous layer of roasted red pepper sauce down the center.
- Top with cooked beef, greens, cucumber slices, and feta cheese. Roll up the wrap and serve warm.
Notes
For a lighter version, swap beef for ground turkey or lamb. You can also use hummus instead of the yogurt sauce for variety.
