Greek Beef Wraps with Roasted Red Pepper Sauce

Ingredients
  

Beef Filling
  • 1 lb ground beef lean preferred
  • 1 tbsp olive oil
  • 2 cloves garlic minced
  • 1 tsp dried oregano
  • 1/2 tsp ground cumin
  • to taste salt and black pepper
Roasted Red Pepper Sauce
  • 1 cup roasted red peppers drained
  • 1/2 cup Greek yogurt
  • 1 tbsp lemon juice freshly squeezed
  • 1 clove garlic
Wrap Assembly
  • 4 flatbreads or pita wraps warmed
  • 1 cup mixed greens or lettuce
  • 1/2 cup cucumber thinly sliced
  • 1/4 cup crumbled feta cheese

Method
 

  1. Heat olive oil in a skillet over medium heat. Add ground beef and cook until browned, breaking it apart as it cooks.
  2. Add garlic, oregano, cumin, salt, and pepper. Cook for 2–3 more minutes until fragrant. Remove from heat and set aside.
  3. In a blender or food processor, combine roasted red peppers, Greek yogurt, lemon juice, and garlic. Blend until smooth to make the sauce.
  4. Warm the flatbreads or pita wraps. Spread a generous layer of roasted red pepper sauce down the center.
  5. Top with cooked beef, greens, cucumber slices, and feta cheese. Roll up the wrap and serve warm.

Notes

For a lighter version, swap beef for ground turkey or lamb. You can also use hummus instead of the yogurt sauce for variety.
