Ingredients
  

Green Beans Almondine
  • 1 lb fresh green beans trimmed
  • 2 tbsp unsalted butter
  • 1/4 cup sliced almonds toasted
  • 1 clove garlic minced
  • 1 tbsp lemon juice freshly squeezed
  • 1/4 tsp salt or to taste
  • 1/4 tsp black pepper freshly ground

Method
 

  1. Bring a large saucepan of salted water to a boil. Add green beans and cook for 3–4 minutes until bright green and just tender-crisp.
  2. Drain and immediately transfer beans to an ice bath to stop the cooking process. Drain again and set aside.
  3. In a large skillet, melt butter over medium heat. Add sliced almonds and toast until golden brown, about 2–3 minutes, stirring frequently.
  4. Add minced garlic and cook for another 30 seconds, until fragrant.
  5. Add green beans to the skillet and toss to coat in the butter and almonds. Season with salt, pepper, and lemon juice. Stir well and serve warm.

Notes

To save time, blanch the green beans ahead of time and store them in the refrigerator until ready to sauté. For extra richness, add a small pat of butter before serving.
