Method
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, toss the halved potatoes with olive oil, garlic powder, oregano, salt, and pepper until evenly coated.
- Spread the potatoes in a single layer on the prepared baking sheet, cut side down.
- Bake for 30–35 minutes, flipping halfway through, until golden and crisp on the edges.
- Remove from the oven and immediately sprinkle with crumbled feta, lemon juice, and fresh parsley.
- Serve warm as a side dish or enjoy as a light vegetarian meal.
Notes
For extra flavor, add a sprinkle of chili flakes or drizzle with balsamic glaze before serving. Works well with sweet potatoes too!
