Healthy Baked Feta Potatoes

Ingredients
  

Vegetables & Seasoning
  • 6 medium potatoes cut into wedges
  • 3 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp paprika
  • 2 cloves garlic minced
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 1 cup cherry tomatoes halved
  • 1 red onion sliced
  • 7 oz feta cheese crumbled
  • 2 tbsp fresh parsley chopped
  • 0.5 lemon juiced

Method
 

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Place potato wedges in a large bowl and toss with olive oil, oregano, paprika, garlic, salt, and black pepper.
  3. Spread potatoes evenly on the prepared baking sheet and bake for 25 minutes.
  4. Remove tray from oven and add cherry tomatoes and sliced red onion over the potatoes.
  5. Sprinkle crumbled feta over the top.
  6. Return to the oven and bake for an additional 15–20 minutes, until potatoes are golden and feta is lightly browned.
  7. Remove from oven and drizzle with lemon juice.
  8. Garnish with fresh parsley before serving.

Notes

For extra crispiness, soak potato wedges in cold water for 20 minutes before seasoning.
