Ingredients
  

Chili Base
  • 1 tbsp olive oil
  • 1 yellow onion diced
  • 3 cloves garlic minced
  • 1 lb lean ground turkey
  • 1 red bell pepper diced
  • 1 green bell pepper diced
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 can diced tomatoes 14 oz can
  • 1 can tomato sauce 15 oz can
  • 2 cans beans any mix (kidney, black, or pinto); drained & rinsed
  • 1 cup chicken broth
  • salt & pepper to taste
Toppings
  • green onions sliced
  • cilantro chopped
  • lime wedges

Method
 

  1. Heat olive oil in a large pot over medium heat. Add onion and cook until softened.
  2. Add garlic and ground turkey. Cook until turkey is browned and cooked through.
  3. Add peppers, chili powder, cumin, and smoked paprika. Stir and cook for 2 minutes.
  4. Pour in diced tomatoes, tomato sauce, beans, and chicken broth. Stir to combine.
  5. Bring to a simmer and cook uncovered for 20–25 minutes, stirring occasionally.
  6. Season with salt and pepper, then serve with cilantro, lime, and green onions.

Notes

For richer flavor, let the chili simmer longer. It also freezes well for easy meal prep!
