1. Preheat & Prepare Potatoes:
- Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
- In a large mixing bowl, combine the chopped potatoes, 2 tbsp olive oil, 1 tsp garlic powder, 1 tsp onion powder, 1/2 tsp smoked paprika, 1/2 tsp dried rosemary, 1/2 tsp salt, and 1/4 tsp black pepper. Toss until potatoes are evenly coated.
- Spread the seasoned potatoes in a single layer on one half of the prepared baking sheet.
2. Prepare Chicken & Bacon:
- In a separate large mixing bowl, combine the cubed chicken, 1 tbsp olive oil, 1 tsp dried thyme, 1/2 tsp garlic powder, 1/4 tsp salt, and 1/8 tsp black pepper. Toss until chicken is evenly coated.
- Add the chopped bacon pieces to the chicken mixture and toss gently to combine.
3. Assemble and Roast:
- Arrange the chicken and bacon mixture in a single layer on the other half of the baking sheet, next to the potatoes. Ensure both are spread out evenly for optimal roasting.
- Roast for 20 minutes.
4. Toss & Continue Roasting:
- Remove the baking sheet from the oven. Carefully toss both the potatoes and the chicken/bacon mixture to ensure even cooking and browning.
- Return to the oven and roast for another 20-25 minutes, or until potatoes are tender and golden brown, chicken is cooked through (internal temperature 165°F / 74°C), and bacon is crispy.
5. Serve:
- Once cooked, remove from oven. Garnish with fresh chopped parsley, if desired.

Notes
For crispier bacon, you can pre-cook it partially before adding it to the sheet pan. Feel free to add other vegetables like bell peppers or broccoli florets during the last 15-20 minutes of roasting. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
