  • 12-14 oz Smoked Sausage kielbasa or similar, sliced into 1/2-inch thick rounds
  • 1.5 lbs Yukon Gold Potatoes or red potatoes, diced into 1/2-inch cubes
  • 1 medium Yellow Onion chopped
  • 1 large Bell Pepper any color, chopped into 1/2-inch pieces
  • 2 cloves Garlic minced
  • 2 tbsp Olive Oil divided
  • 1 tsp Smoked Paprika
  • 1/2 tsp Dried Thyme
  • 1/2 tsp Salt or to taste
  • 1/4 tsp Black Pepper freshly ground, or to taste
  • 2 tbsp Fresh Parsley chopped, for garnish (optional)

Method
 

Preparation
  1. Prepare all ingredients: Slice the smoked sausage into 1/2-inch thick rounds. Dice the potatoes into 1/2-inch cubes. Chop the onion and bell pepper into 1/2-inch pieces. Mince the garlic.
Cook the Skillet
  1. In a large mixing bowl, combine the diced potatoes with 1 tablespoon of olive oil, smoked paprika, dried thyme, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Toss until the potatoes are evenly coated.
  2. Heat the remaining 1 tablespoon of olive oil in a large (12-inch) non-stick skillet over medium-high heat. Add the seasoned potatoes to the skillet in a single layer. Cook for 10-12 minutes, stirring occasionally, until the potatoes are tender and lightly browned.
  3. Push the cooked potatoes to one side of the skillet. Add the sliced smoked sausage to the empty side of the skillet. Cook for 5 minutes, turning occasionally, until the sausage is lightly browned and heated through.
  4. Add the chopped onion and bell pepper to the skillet with the potatoes and sausage. Continue cooking, stirring occasionally to combine all ingredients, for another 8-10 minutes, or until the vegetables are tender-crisp.
  5. Stir in the minced garlic and cook for 1 minute more, until fragrant.
Serve
  1. Remove the skillet from heat. Taste and adjust seasoning if necessary. Garnish with fresh chopped parsley, if desired, and serve warm.

Notes

For extra crispiness, you can cover the skillet for the first 5-7 minutes of potato cooking to steam them tender, then uncover and continue cooking to brown. Feel free to customize with other vegetables like zucchini or corn.
