Ingredients
  

For the Chia Pudding
  • 1/2 cup Chia Seeds
  • 1.5 cups Unsweetened Almond Milk (or any plant-based milk)
  • 2 tbsp Maple Syrup (or honey, adjust to taste)
  • 1/2 tsp Vanilla Extract
  • pinch Salt
For the Berry Compote
  • 1 cup Mixed Berries (fresh or frozen)
  • 1 tbsp Lemon Juice
  • 1 tbsp Maple Syrup (or other sweetener, adjust to taste)
For Layering & Topping
  • 1 cup Greek Yogurt (plain, unsweetened, or coconut yogurt for dairy-free)
  • 1/2 cup Fresh Berries (for garnish)
  • 1/4 cup Granola
  • 2 sprigs Fresh Mint (for garnish, optional)

Method
 

Prepare the Chia Pudding
  1. In a large mixing bowl, combine the chia seeds, almond milk, 2 tablespoons of maple syrup, vanilla extract, and a pinch of salt. Whisk vigorously for about 1-2 minutes to ensure there are no clumps and the chia seeds are evenly distributed.
  2. Cover the bowl and refrigerate for at least 4 hours, or preferably overnight, until the pudding is thick and gel-like. Stir once or twice during the first hour to prevent clumping.
Make the Berry Compote
  1. In a small saucepan, combine the 1 cup of mixed berries, lemon juice, and 1 tablespoon of maple syrup. Bring to a gentle simmer over medium-low heat, stirring occasionally, for 5-7 minutes, until the berries soften and release their juices, and the sauce thickens slightly.
  2. Remove from heat and let the compote cool completely. You can mash the berries slightly with a fork for a chunkier compote, or blend briefly for a smoother sauce.
Assemble Heaven in a Bowl
  1. Once the chia pudding is set and the compote is cool, it's time to assemble your 'Heaven in a Bowl' parfaits.
  2. Divide half of the chia pudding between two serving glasses or bowls. Top each with a layer of half the berry compote.
  3. Next, add a layer of half the Greek yogurt on top of the compote in each bowl.
  4. Repeat the layers: remaining chia pudding, remaining berry compote, and finally, the remaining Greek yogurt.
  5. Garnish each bowl with fresh berries, a sprinkle of granola, and a sprig of fresh mint if desired. Serve immediately and enjoy your little piece of heaven!

Notes

The chia pudding must chill for at least 4 hours, or ideally overnight, to achieve the perfect creamy texture. The berry compote can be made several days in advance and stored in an airtight container in the refrigerator. For a richer flavor, toast your granola lightly before topping. This recipe is highly customizable – feel free to swap berries for other fruits, use different nuts or seeds instead of granola, or add a drizzle of nut butter.
