Ingredients

  • 1 large egg
  • 1/4 cup vital wheat gluten
  • 2 tbsp oat flour or almond flour
  • 1/2 tsp baking powder
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp salt
  • 1/8 tsp black pepper freshly ground
For the Filling
  • 1/2 cup shredded mozzarella cheese low-moisture, part-skim
  • 2 tbsp finely diced turkey pepperoni or ham (optional, for extra protein)
For the Coating (Optional)
  • 1 large egg beaten (for egg wash)
  • 1 tbsp sesame seeds or everything bagel seasoning (optional)

Method
 

Prepare Cottage Cheese Dough
  1. In a large mixing bowl, combine the well-drained cottage cheese and large egg. Mix thoroughly with a spatula or spoon until smooth.
  2. To the cottage cheese mixture, add vital wheat gluten, oat flour, baking powder, garlic powder, onion powder, salt, and black pepper. Mix with a spatula or spoon until a thick, cohesive dough forms. It will be sticky.
Assemble Rolls
  1. In a small bowl, combine the shredded mozzarella cheese and optional diced turkey pepperoni or ham. Set aside.
  2. Lightly flour your hands or spray with cooking spray. Take about 2 tablespoons of the cottage cheese dough and flatten it into a small rectangle or oval in your palm. Place about 1 teaspoon of the cheese filling in the center.
  3. Carefully fold the dough over the filling and pinch the edges together, then gently roll it into a log or ball shape, ensuring the filling is completely enclosed. Repeat with the remaining dough and filling, yielding approximately 10 rolls.
Air Fry
  1. Preheat your air fryer to 375°F (190°C) for 5 minutes.
  2. If desired, beat one egg in a small bowl for an egg wash. Dip each roll into the egg wash, then sprinkle with sesame seeds or everything bagel seasoning. This step enhances crispiness and flavor.
  3. Line the air fryer basket with parchment paper (ensure it doesn't obstruct airflow) or spray with cooking spray. Arrange the rolls in a single layer, ensuring they don't touch. You will likely need to cook in batches.
  4. Air fry for 12-15 minutes, flipping them halfway through, until golden brown and crispy. Cooking time may vary slightly depending on your air fryer model.
Serve
  1. Remove from the air fryer and let cool for a few minutes before serving. Enjoy plain or with your favorite dipping sauce like marinara, sriracha mayo, or sugar-free ketchup.

Ensure cottage cheese is very well-drained to prevent a watery dough. This is crucial for achieving the right texture.
For oven baking: Bake at 400°F (200°C) for 20-25 minutes on a parchment-lined baking sheet, flipping halfway, until golden brown.
