- Preheat the oven to 375°F (190°C) and line a baking tray with parchment paper.
- Blend the cottage cheese in a blender or food processor until smooth and creamy.
- Transfer the blended cottage cheese to a bowl and whisk in the eggs, olive oil, honey, and apple cider vinegar.
- In a separate bowl, mix the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until a soft dough forms.
- Divide the dough into equal portions and shape into rolls using lightly floured hands.
- Place the rolls on the prepared baking tray and sprinkle with seeds if using.
- Bake for 18–22 minutes, or until lightly golden and cooked through.
- Cool slightly before serving warm or at room temperature.
