Ingredients
  

  • 1 cup cottage cheese
  • 2 large eggs
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tbsp olive oil
  • 1 tbsp honey
  • 1 tsp apple cider vinegar
  • 1 tbsp sesame seeds or mixed seeds optional

Method
 

  1. Preheat the oven to 375°F (190°C) and line a baking tray with parchment paper.
  2. Blend the cottage cheese in a blender or food processor until smooth and creamy.
  3. Transfer the blended cottage cheese to a bowl and whisk in the eggs, olive oil, honey, and apple cider vinegar.
  4. In a separate bowl, mix the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until a soft dough forms.
  6. Divide the dough into equal portions and shape into rolls using lightly floured hands.
  7. Place the rolls on the prepared baking tray and sprinkle with seeds if using.
  8. Bake for 18–22 minutes, or until lightly golden and cooked through.
  9. Cool slightly before serving warm or at room temperature.

Notes

These rolls are great sliced and toasted, or served alongside soups and salads.
