Ingredients
  

For the Casserole Base
  • 1 lb Ground turkey sausage lean
  • 1 medium Onion finely chopped
  • 1 medium Bell Pepper any color, diced
  • 3 cups Fresh Spinach roughly chopped
  • 12 large Eggs
  • 2 cups Cottage Cheese low-fat or full-fat
  • 1/4 cup Milk any type (optional, for creaminess)
  • 1 cup Shredded Cheddar Cheese or Monterey Jack
  • 1 tsp Garlic Powder
  • 1/2 tsp Onion Powder
  • 1/2 tsp Salt or to taste
  • 1/4 tsp Black Pepper or to taste
  • 1 tbsp Olive Oil for sautéing

Method
 

Preparation
  1. Preheat oven to 375°F (190°C). Grease a 9x13 inch baking dish with cooking spray or a little olive oil.
  2. In a large skillet over medium-high heat, add olive oil. Add the ground turkey sausage and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Drain any excess fat.
  3. Add the chopped onion and bell pepper to the same skillet. Sauté for 5-7 minutes until softened. Stir in the chopped spinach and cook until wilted, about 2-3 minutes. Remove from heat and set aside.
Assemble the Casserole
  1. In a large mixing bowl, whisk together the eggs, cottage cheese, milk (if using), garlic powder, onion powder, salt, and black pepper until well combined.
  2. Add the cooked turkey sausage and vegetable mixture to the egg mixture. Stir in 3/4 cup of the shredded cheese.
  3. Pour the entire mixture into the prepared baking dish, spreading it evenly.
  4. Sprinkle the remaining 1/4 cup of shredded cheese over the top of the casserole.
Bake and Serve
  1. Bake for 35-45 minutes, or until the casserole is set in the center and the top is lightly golden brown. A knife inserted into the center should come out clean.
  2. Let the casserole rest for 5-10 minutes before slicing and serving.

Notes

Storage: Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days. It reheats well in the microwave or oven. Variations: Feel free to add other vegetables like mushrooms, zucchini, or sun-dried tomatoes. You can also experiment with different types of cheese or add a pinch of red pepper flakes for a little heat.
