Preparation
- Preheat oven to 375°F (190°C). Grease a 9x13 inch baking dish with cooking spray or a little olive oil.
- In a large skillet over medium-high heat, add olive oil. Add the ground turkey sausage and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Drain any excess fat.
- Add the chopped onion and bell pepper to the same skillet. Sauté for 5-7 minutes until softened. Stir in the chopped spinach and cook until wilted, about 2-3 minutes. Remove from heat and set aside.
Assemble the Casserole
- In a large mixing bowl, whisk together the eggs, cottage cheese, milk (if using), garlic powder, onion powder, salt, and black pepper until well combined.
- Add the cooked turkey sausage and vegetable mixture to the egg mixture. Stir in 3/4 cup of the shredded cheese.
- Pour the entire mixture into the prepared baking dish, spreading it evenly.
- Sprinkle the remaining 1/4 cup of shredded cheese over the top of the casserole.
Bake and Serve
- Bake for 35-45 minutes, or until the casserole is set in the center and the top is lightly golden brown. A knife inserted into the center should come out clean.
- Let the casserole rest for 5-10 minutes before slicing and serving.
Notes
Storage: Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days. It reheats well in the microwave or oven. Variations: Feel free to add other vegetables like mushrooms, zucchini, or sun-dried tomatoes. You can also experiment with different types of cheese or add a pinch of red pepper flakes for a little heat.
