Ingredients
  

Beef
  • 1 lb beef sirloin or flank steak thinly sliced
  • 2 tbsp soy sauce
  • 2 tbsp honey
  • 2 cloves garlic minced
  • 1 tbsp olive oil
  • 1 tsp cornstarch optional, for thickening sauce
Roasted Potatoes
  • 1 1/2 lb baby potatoes halved
  • 2 tbsp olive oil
  • 1 tsp salt or to taste
  • 1/2 tsp black pepper
  • 1 tsp dried rosemary or thyme

Method
 

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a bowl, toss the halved potatoes with olive oil, salt, pepper, and rosemary. Spread them evenly on the baking sheet and roast for 25–30 minutes, flipping halfway through, until golden and crispy.
  3. While the potatoes roast, heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the sliced beef and cook until browned, about 3–4 minutes.
  4. In a small bowl, whisk together soy sauce, honey, and minced garlic. Pour the mixture over the cooked beef and stir to coat. Simmer for 2–3 minutes until the sauce thickens slightly. (Add cornstarch if desired.)
  5. Remove the potatoes from the oven and serve with the honey-glazed beef on top or on the side. Garnish with chopped parsley or sesame seeds if desired.

Notes

For extra flavor, marinate the beef in the honey-soy mixture for 30 minutes before cooking. You can also add vegetables like bell peppers or broccoli for a full meal.
