Prepare the Salmon
- Pat the salmon cubes dry with a paper towel. In a large bowl, toss the salmon with olive oil, salt, and black pepper until evenly coated.
- Preheat your air fryer to 400°F (200°C). Arrange the salmon bites in a single layer in the air fryer basket. Cook for 8-10 minutes, flipping halfway through, until cooked through and lightly golden. (Cooking time may vary based on air fryer model and salmon thickness).
Make the Honey Garlic Sauce
- While the salmon cooks, prepare the sauce. In a small saucepan, combine honey, soy sauce, minced garlic, rice vinegar, and sesame oil.
- Whisk together cornstarch and water in a small separate bowl to create a slurry.
- Bring the sauce mixture to a gentle simmer over medium heat. Whisk in the cornstarch slurry. Continue to simmer and whisk for 1-2 minutes until the sauce thickens to your desired consistency. Remove from heat.
Assemble the Bowls
- Add the cooked salmon bites to the saucepan with the honey garlic sauce. Gently toss to coat all the salmon pieces.
- Blanch or steam the broccoli florets until tender-crisp (about 3-4 minutes). Alternatively, you can air fry them with a little olive oil, salt, and pepper for 5-7 minutes at 380°F (195°C).
- Divide the warm cooked rice between two serving bowls. Arrange the sauced salmon bites and steamed broccoli alongside the rice in each bowl.
- Garnish with thinly sliced green onions and toasted sesame seeds. Serve immediately.
Notes
For a spicier kick, add a pinch of red pepper flakes to the honey garlic sauce. You can prep the rice and chop the broccoli ahead of time to make this meal even quicker. Leftovers can be stored in an airtight container in the refrigerator for up to 2 days, though salmon is best enjoyed fresh. Reheat gently to avoid drying out the fish.
