Method
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, toss the potato chunks with half of the olive oil, salt, pepper, rosemary, and garlic.
- Place the seasoned potatoes in a baking dish and arrange the chicken thighs on top.
- Brush the chicken with the remaining olive oil and sprinkle with paprika, salt, and pepper.
- Bake uncovered for 55–60 minutes, or until the chicken skin is crispy and the potatoes are golden brown.
- Garnish with fresh rosemary or parsley before serving. Serve hot.
Notes
For extra flavor, add a splash of lemon juice or a sprinkle of Parmesan cheese just before serving.
