Ingredients
  

Quick Bread Base
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup honey
  • 1 cup milk
  • 2 large eggs
  • 1/3 cup unsalted butter melted
  • 2 fresh jalapeños seeded and finely chopped
  • 1/2 cup shredded cheddar cheese
Finishing
  • 1 tbsp honey for drizzling

Method
 

  1. Preheat the oven to 350°F (175°C) and lightly grease a 9×5 inch loaf pan.
  2. Whisk together flour, baking powder, salt, and black pepper in a large bowl.
  3. In another bowl, combine honey, milk, eggs, and melted butter, whisking until smooth.
  4. Pour the wet mixture into the dry ingredients and stir gently until just combined.
  5. Fold in chopped jalapeños and shredded cheddar cheese.
  6. Transfer the batter to the loaf pan and smooth the top.
  7. Bake for 40–45 minutes, or until a toothpick inserted in the center comes out clean.
  8. Drizzle honey over the warm bread for a glossy finish.
  9. Cool 10 minutes in the pan before transferring to a wire rack.

Notes

This bread pairs wonderfully with chili, BBQ dishes, or a simple pat of butter. For extra heat, leave some jalapeño seeds in the batter.
