Ingredients
  

For the Chicken Burgers
  • 1.25 lbs ground chicken (preferably 92/8 or 93/7 for juiciness)
  • 1/4 cup panko breadcrumbs
  • 2 tbsp fresh cilantro finely chopped
  • 1 tbsp red onion very finely minced
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/4 tsp cumin ground
  • 1/4 tsp black pepper freshly ground
  • 1/2 tsp salt or to taste
  • 1 tbsp olive oil for cooking
For the Mango Salsa
  • 1 large ripe mango peeled, pitted, and diced (about 1.5 cups)
  • 1/4 cup red onion finely diced
  • 1/4 cup fresh cilantro chopped
  • 1 jalapeño jalapeño seeded and minced (optional, for heat)
  • 1 tbsp lime juice freshly squeezed
  • 1/4 tsp salt or to taste
For Serving
  • 4 burger buns toasted
  • 4 leaves lettuce e.g., butter lettuce or green leaf
  • Avocado slices optional

Method
 

Prepare the Mango Salsa
  1. In a medium bowl, combine the diced mango, finely diced red onion, chopped cilantro, minced jalapeño (if using), lime juice, and salt.
  2. Stir gently to combine all ingredients. Taste and adjust seasoning if needed. Cover and refrigerate while you prepare the burgers to allow flavors to meld.
Make the Chicken Burgers
  1. In a large mixing bowl, combine the ground chicken, panko breadcrumbs, finely chopped cilantro, minced red onion, garlic powder, smoked paprika, ground cumin, black pepper, and salt.
  2. Gently mix the ingredients with your hands until just combined. Be careful not to overmix, as this can lead to tough burgers. Divide the mixture into 4 equal portions and shape them into patties, about 3/4 inch thick. Make a slight indentation in the center of each patty with your thumb to prevent them from bulging while cooking.
Cook the Burgers
  1. Heat olive oil in a large grill pan or skillet over medium-high heat.
  2. Once hot, carefully place the chicken patties in the pan. Cook for 5-7 minutes per side, or until golden brown and cooked through (internal temperature reaches 165°F / 74°C). The cooking time may vary depending on the thickness of your patties.
  3. If desired, lightly toast the burger buns on the grill pan or in a toaster during the last few minutes of cooking.
Assemble and Serve
  1. Place a lettuce leaf on the bottom half of each toasted bun.
  2. Top with a cooked chicken burger patty.
  3. Spoon a generous amount of the fresh mango salsa over the chicken burger.
  4. Add avocado slices if using.
  5. Cover with the top half of the bun and serve immediately.

Notes

For extra juiciness, add 1-2 tablespoons of plain Greek yogurt or mayonnaise to the chicken mixture. Burgers can be grilled outdoors as well; adjust cooking time as needed. Leftover mango salsa is delicious on fish or with tortilla chips.
