- In a large pot, cook ground beef or sausage over medium heat until browned. Drain excess fat.
- Add chopped onion and garlic, cooking until fragrant and softened, about 3–4 minutes.
- Stir in tomato paste, crushed tomatoes, broth, basil, oregano, and red pepper flakes. Bring to a boil, then reduce to a simmer for 20 minutes.
- Add broken lasagna noodles and simmer until tender, about 10–12 minutes.
- In a bowl, mix ricotta, mozzarella, and Parmesan cheeses together for topping.
- Ladle soup into bowls, top each with a dollop of the cheese mixture, and sprinkle with fresh basil or parsley.
Notes
This Lasagna Soup Delight freezes well—store leftovers in individual containers and reheat when needed. For a lighter option, use ground turkey instead of beef or sausage.
