Ingredients
  

Soup Base
  • 1 lb ground beef or Italian sausage or a mix of both
  • 1 onion chopped
  • 3 cloves garlic minced
  • 1 can crushed tomatoes (28 oz / 796 g)
  • 2 tbsp tomato paste
  • 4 cups chicken or beef broth
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp crushed red pepper flakes optional, for heat
Pasta & Cheese Topping
  • 8 oz lasagna noodles broken into bite-size pieces
  • 1 cup ricotta cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • fresh basil or parsley for garnish

Method
 

  1. In a large pot, cook ground beef or sausage over medium heat until browned. Drain excess fat.
  2. Add chopped onion and garlic, cooking until fragrant and softened, about 3–4 minutes.
  3. Stir in tomato paste, crushed tomatoes, broth, basil, oregano, and red pepper flakes. Bring to a boil, then reduce to a simmer for 20 minutes.
  4. Add broken lasagna noodles and simmer until tender, about 10–12 minutes.
  5. In a bowl, mix ricotta, mozzarella, and Parmesan cheeses together for topping.
  6. Ladle soup into bowls, top each with a dollop of the cheese mixture, and sprinkle with fresh basil or parsley.

Notes

This Lasagna Soup Delight freezes well—store leftovers in individual containers and reheat when needed. For a lighter option, use ground turkey instead of beef or sausage.
