- In a large pot, melt butter over medium heat. Add onion and garlic, cooking until softened and fragrant.
- Whisk in flour and cook for 1 minute, then gradually pour in chicken broth while stirring to avoid lumps.
- Add chicken, broccoli, carrots, salt, and pepper. Simmer for 15 minutes until vegetables are tender.
- Reduce heat to low. Stir in milk and cheddar cheese until melted and creamy.
- Top each bowl with crumbled bacon and extra cheese before serving.
Notes
For a lighter version, use half-and-half or milk instead of cream and skip the bacon. You can also blend part of the soup for a thicker texture.
