- Preheat oven to 375°F (190°C).
- Cook pasta in salted boiling water until al dente. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Sauté onion until soft, then add garlic and cook briefly.
- Add ground beef and cook until browned. Drain excess fat if needed.
- Stir in taco seasoning, tomato sauce, and salsa. Simmer for a few minutes.
- Add black beans and corn. Season with salt and pepper.
- Remove from heat and mix in sour cream and cooked pasta.
- Transfer to a greased baking dish, top with cheeses, and bake until bubbly and melted.
- Garnish with parsley or green onions before serving.
Notes
Serve with extra salsa or a dollop of sour cream for even more flavor.
