Method
- Line a baking sheet with parchment paper and set aside.
- Place the frosted sugar cookies in the bowl of a stand mixer or a large mixing bowl (or use a food processor). Crumble them until you have fine crumbs.
- Add the softened cream cheese to the cookie crumbs and mix until you have a smooth paste-like dough.
- Scoop out about 1½ tablespoons of the mixture (or use a medium cookie scoop) and roll into smooth balls. Place the balls on prepared baking sheet.
- Chill the truffle balls in the fridge for about 10 minutes so they firm up.
- While they chill, melt the candy melts with the coconut oil in a microwave-safe bowl, stirring every 30 seconds until smooth.
- Using a fork (a plastic one with the middle prong removed works well), dip each truffle ball into the melted candy, letting excess drip off, and place back on parchment-lined sheet. Immediately sprinkle with Christmas sprinkles.
- Allow the dipped truffles to set for about 15 minutes at room temperature (or chill briefly) until firm. Serve and enjoy!

Feel free to switch up the candy melt color or sprinkles to match any holiday theme (e.g., red/white for Valentine’s, orange/purple for Halloween).
