  • 1 1/2 lbs Brussels sprouts trimmed and halved
  • 3 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
Glaze & Toppings
  • 2 tbsp pure maple syrup
  • 1 tbsp balsamic vinegar optional for extra tang
  • 1/2 cup chopped walnuts toasted

Method
 

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, toss the Brussels sprouts with olive oil, salt, and pepper until evenly coated.
  3. Spread the Brussels sprouts in a single layer on the baking sheet, cut side down for maximum crispiness.
  4. Roast for 20–25 minutes, stirring halfway through, until golden brown and crisp on the edges.
  5. Remove from oven and drizzle with maple syrup and balsamic vinegar (if using). Toss with toasted walnuts and serve immediately.

Notes

For extra flavor, add a sprinkle of red pepper flakes or Parmesan cheese before serving. These make a fantastic side for roast chicken, turkey, or beef.
