Method
- Cook the pasta according to package directions until al dente. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add shrimp, season with salt and pepper, and cook for 2–3 minutes per side until pink and cooked through. Remove and set aside.
- In the same skillet, melt butter. Add garlic and sauté until fragrant, about 1 minute.
- Stir in sun-dried tomatoes and Italian seasoning. Pour in heavy cream and chicken broth, stirring to combine.
- Reduce heat and stir in parmesan cheese until melted and sauce thickens slightly.
- Add cooked shrimp back into the skillet, then toss in the pasta. Mix until well coated with sauce.
- Garnish with fresh basil or parsley and serve immediately.
Notes
You can substitute chicken for shrimp if desired. For extra spice, add a pinch of red pepper flakes to the sauce.
