Ingredients

Pasta
  • 12 oz linguine or fettuccine
Shrimp
  • 1 lb large shrimp peeled and deveined
  • 1 tbsp olive oil
Creamy Sauce
  • 2 tbsp butter
  • 3 cloves garlic minced
  • 1/2 cup sun-dried tomatoes chopped
  • 1 tsp Italian seasoning
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 3/4 cup parmesan cheese grated
  • fresh basil or parsley for garnish
  • salt and pepper to taste

Equipment

  • Large Skillet
  • Pot
  • Colander

Method

  1. Cook the pasta according to package directions until al dente. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add shrimp, season with salt and pepper, and cook for 2–3 minutes per side until pink and cooked through. Remove and set aside.
  3. In the same skillet, melt butter. Add garlic and sauté until fragrant, about 1 minute.
  4. Stir in sun-dried tomatoes and Italian seasoning. Pour in heavy cream and chicken broth, stirring to combine.
  5. Reduce heat and stir in parmesan cheese until melted and sauce thickens slightly.
  6. Add cooked shrimp back into the skillet, then toss in the pasta. Mix until well coated with sauce.
  7. Garnish with fresh basil or parsley and serve immediately.

Notes

You can substitute chicken for shrimp if desired. For extra spice, add a pinch of red pepper flakes to the sauce.
