Ingredients

  • 2 tbsp olive oil
  • 2 tbsp butter
  • 2 ribeye or sirloin steaks about 1 inch thick
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 4 cloves garlic minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup sun-dried tomatoes chopped
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1/2 tsp paprika
  • 1/4 cup Parmesan cheese grated
  • fresh basil chopped, for serving

Equipment

  • Skillet

Method

  1. Pat the steaks dry and season both sides with salt, pepper, and garlic powder.
  2. Heat olive oil and butter in a skillet over medium-high heat. Sear the steaks for 3–4 minutes per side or until they reach your preferred doneness. Remove and set aside.
  3. Add the minced garlic to the skillet and cook for 30 seconds.
  4. Pour in the chicken broth and scrape the bottom of the pan to release browned bits.
  5. Reduce heat to medium and stir in heavy cream, sun-dried tomatoes, oregano, thyme, and paprika. Simmer for 3–4 minutes.
  6. Add Parmesan and stir until the sauce thickens slightly.
  7. Return the steaks to the pan and spoon the sauce over them. Simmer for 2–3 minutes.
  8. Garnish with fresh basil before serving.

Notes
