- Place couscous in a large bowl, add salt and olive oil, then pour boiling water or broth over it.
- Cover and let sit for 5 minutes until liquid is absorbed.
- Fluff couscous with a fork and allow it to cool slightly.
- Add tomatoes, cucumber, red onion, olives, feta, parsley, and mint.
- Whisk together olive oil, lemon juice, lemon zest, oregano, and black pepper.
- Pour dressing over the salad and toss gently to combine.
- Chill for 15–20 minutes before serving for best flavor.
