- Preheat oven to 375°F (190°C). Lightly grease a loaf pan or line with parchment paper.
- In a large bowl, combine ground chicken, breadcrumbs, Parmesan, minced garlic, milk, egg, Italian seasoning, salt, and pepper. Mix until just combined — do not overmix.
- Transfer the mixture to the prepared loaf pan and shape into a loaf.
- In a small bowl, stir together melted butter, Parmesan cheese, and garlic powder. Brush the mixture over the top of the meatloaf.
- Bake for 40–45 minutes, or until the internal temperature reaches 165°F (74°C) and the top is golden brown.
- Let rest for 5–10 minutes before slicing. Garnish with chopped parsley and serve warm.
Notes
For a juicier texture, add a few tablespoons of grated onion or sour cream to the mixture. This meatloaf pairs wonderfully with mashed potatoes or roasted vegetables.
