Ingredients
  

Batter
  • 1 cup all-purpose flour
  • 1 tbsp sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup milk
  • 1 egg
  • 1 tbsp melted butter
  • 1 tbsp maple syrup
Add-ins
  • 4 chicken sausage links cooked and chopped
  • 1/2 cup shredded cheddar cheese
  • 1 tbsp oil for cooking

Method
 

  1. In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, combine the milk, egg, melted butter, and maple syrup until smooth.
  3. Gradually add the wet ingredients to the dry ingredients, stirring until a thick batter forms.
  4. Fold in the chopped chicken sausage and shredded cheddar cheese.
  5. Heat a non-stick pan over medium heat and lightly grease with oil.
  6. Scoop small spoonfuls of batter onto the pan to form bite-sized pancakes.
  7. Cook for 2-3 minutes on each side, or until golden brown and cooked through.
  8. Remove from heat and let cool slightly before serving.
  9. Serve warm with extra maple syrup for dipping if desired.

Notes

For extra flavor, try adding a pinch of cinnamon to the batter or swapping chicken sausage with turkey or beef sausage.
