Ingredients
  

Dry Ingredients
  • 2 1/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
Wet Ingredients
  • 1 cup unsalted butter softened
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar
  • 2 large eggs
  • 1 tsp pure vanilla extract
  • 1 1/2 tsp peppermint extract
  • natural green food coloring a few drops, optional
Mix-ins
  • 1 cup semisweet chocolate chips
  • 1 cup white chocolate chips

Method
 

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. Whisk together flour, baking soda, and salt in a medium bowl.
  3. Cream softened butter with granulated sugar and brown sugar until light and fluffy.
  4. Add eggs one at a time, mixing well. Stir in vanilla and peppermint extracts.
  5. Add green food coloring if desired and mix until evenly tinted.
  6. Gradually add dry ingredients to wet ingredients, mixing until a soft dough forms.
  7. Fold in semisweet and white chocolate chips.
  8. Scoop tablespoon-sized portions onto baking sheets, leaving space between cookies.
  9. Bake 10–12 minutes, until edges are lightly golden and centers soft.
  10. Cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For a stronger mint flavor, add up to 1/2 teaspoon more peppermint extract. Try chilling the dough for thicker cookies.
