- Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Place the kielbasa on a cutting board and slice crosswise every 1/4 inch, being careful not to cut all the way through.
- Transfer the sliced kielbasa to the prepared baking sheet.
- In a small bowl, mix olive oil, whole grain mustard, Dijon mustard, honey, garlic powder, smoked paprika, and black pepper until smooth.
- Brush the mustard mixture generously over the kielbasa, ensuring it seeps into the slices.
- Bake for 25–30 minutes, basting once halfway through, until caramelized and slightly crispy on the edges.
- Remove from the oven and let rest for 5 minutes.
- Slice into bite-sized pieces and garnish with fresh chives before serving.
Notes
Serve with toothpicks and extra mustard on the side for dipping. Great for game days and gatherings.
