Method
- In a mixing bowl, combine shredded coconut, powdered sugar, softened butter, vanilla, and milk.
- Mix until a soft dough forms. If too dry, add a splash more milk.
- Roll the mixture into small balls, about 1 inch in size.
- Roll each ball in additional shredded coconut to coat.
- Refrigerate for 30 minutes before serving.
Notes
For variation, add a whole almond in the center or dip the finished balls in melted chocolate.
