- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together oats, flour, baking soda, cinnamon, and salt.
- Cream the butter with brown sugar and granulated sugar until light and fluffy.
- Add the egg and vanilla extract and mix until well combined.
- Gradually mix the dry ingredients into the wet ingredients until a soft dough forms.
- Fold in the raisins evenly.
- Scoop tablespoon-sized dough portions onto the baking sheet, spacing them apart.
- Flatten slightly and bake for 10–12 minutes until lightly golden.
- Cool on the baking sheet for 5 minutes, then transfer to a wire rack.
Notes
For extra flavor, you can add chopped walnuts or a pinch of nutmeg to the dough.
