  • 3 ripe bananas mashed
  • 1/2 cup unsalted butter melted
  • 1 cup brown sugar
  • 1/4 cup white sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 cup chocolate chips
  • 1/4 cup walnuts chopped, optional

Method
 

  1. Preheat the oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper.
  2. In a large bowl, mix the melted butter, brown sugar, and white sugar until smooth and glossy.
  3. Add the mashed bananas, egg, and vanilla extract, stirring until well combined.
  4. In a separate bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
  5. Gradually fold the dry ingredients into the banana mixture until just combined.
  6. Gently stir in the chocolate chips and walnuts if using.
  7. Spread the batter evenly into the prepared pan.
  8. Bake for 30–35 minutes, until the edges are set and the center is slightly gooey.
  9. Allow to cool for at least 20 minutes before slicing into bars.

Notes

For extra indulgence, serve warm with a scoop of vanilla ice cream. Store leftovers in an airtight container.
