Ingredients
  

Main Ingredients
  • 1 head green cabbage medium size, sliced into 1-inch thick steaks
  • 3 tbsp olive oil
  • 2 tbsp unsalted butter melted
  • 3 cloves garlic minced
  • 1/2 tsp salt or to taste
  • 1/4 tsp black pepper
  • 1/2 tsp smoked paprika optional, for color and flavor
For Serving (optional)
  • fresh parsley chopped, for garnish
  • grated Parmesan cheese optional topping

Method
 

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.
  2. Remove outer leaves of the cabbage and slice it crosswise into 1-inch thick rounds. Carefully place them flat on the prepared baking sheet.
  3. In a small bowl, mix together olive oil, melted butter, minced garlic, salt, pepper, and smoked paprika.
  4. Brush both sides of the cabbage steaks generously with the garlic butter mixture.
  5. Roast in the preheated oven for 25–30 minutes, flipping halfway through, until golden brown and crisp on the edges.
  6. Garnish with parsley or Parmesan cheese if desired, and serve hot.

Notes

For extra flavor, sprinkle with red pepper flakes before roasting or drizzle with balsamic glaze before serving. These make a great low-carb alternative to roasted potatoes.
