Ingredients
  

Salad Base
  • 8 oz rotini or penne pasta
  • 2 cups cooked chicken breast diced or shredded
  • 3 cups romaine lettuce chopped
  • 1 cup cherry tomatoes halved
  • 1/2 cup shredded Parmesan cheese
  • 1/2 cup croutons
  • 1/4 cup red onion thinly sliced
Dressing
  • 1/2 cup plain Greek yogurt
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tbsp Dijon mustard
  • 2 cloves garlic minced
  • 1 tsp Worcestershire sauce alcohol-free
  • 1/2 tsp black pepper
  • 1/2 tsp salt

Method
 

  1. Cook pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
  2. Whisk together Greek yogurt, olive oil, lemon juice, Dijon, garlic, Worcestershire, salt, and pepper until creamy.
  3. Combine cooled pasta, chicken, romaine lettuce, cherry tomatoes, and red onion in a large bowl.
  4. Pour dressing over the mixture and toss gently until evenly coated.
  5. Add Parmesan cheese and croutons just before serving.
  6. Adjust seasoning if needed and chill for 10 minutes before serving.

Notes

Great for potlucks, picnics, or make-ahead lunches. Add bacon or swap chicken for chickpeas for a vegetarian option.
