Ingredients
  

Candy Base
  • 1 cup granulated sugar
  • 1/2 cup light corn syrup
  • 1/4 cup water
  • 1 1/2 cups raw peanuts
  • 1 tbsp unsalted butter
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1/4 tsp salt

Method
 

  1. Line a baking sheet with parchment paper and lightly grease it with butter. Set aside.
  2. In a heavy-bottomed saucepan over medium heat, combine sugar, corn syrup, and water. Stir until the sugar dissolves.
  3. Add the peanuts and continue cooking, stirring frequently, until the mixture reaches a golden amber color.
  4. Reduce heat slightly and continue to cook until the syrup thickens and the peanuts are well toasted.
  5. Remove from heat and quickly stir in butter, vanilla extract, salt, and baking soda. The mixture will foam.
  6. Immediately pour the hot brittle onto the prepared baking sheet.
  7. Using a spatula, spread the mixture thinly and evenly as quickly as possible.
  8. Allow the brittle to cool completely at room temperature until fully hardened.
  9. Once cooled, break into pieces and store in an airtight container.

Notes

Work quickly once the baking soda is added, as the brittle sets fast. For extra flavor, you can add a pinch of cinnamon or drizzle with melted chocolate after cooling.
