  • 1/2 cup unsalted butter melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 tsp peppermint extract
  • 1/3 cup unsweetened cocoa powder
  • 3/4 cup all-purpose flour
  • 1/4 tsp salt
  • 1/2 tsp baking powder
  • 1/2 cup semi-sweet chocolate chips
  • 1/3 cup peppermint candies crushed
  • powdered sugar for dusting

Method
 

  1. Preheat the oven to 350°F (175°C) and grease a standard loaf pan.
  2. In a mixing bowl, whisk together the melted butter and sugar until smooth.
  3. Add the eggs one at a time, whisking well after each addition.
  4. Stir in the vanilla extract and peppermint extract.
  5. Sift in the cocoa powder, flour, salt, and baking powder, then mix gently until just combined.
  6. Fold in the chocolate chips and crushed peppermint candies.
  7. Pour the batter into the prepared loaf pan and spread evenly.
  8. Bake for 45–50 minutes, until a toothpick inserted in the center comes out with a few moist crumbs.
  9. Cool in the pan for 15 minutes, then transfer to a wire rack to cool completely.
  10. Dust with powdered sugar before slicing and serving.

Notes

For extra holiday flair, drizzle with melted chocolate or add a simple peppermint glaze. Store tightly wrapped at room temperature for up to 3 days.
