  • 8 flour tortillas medium-sized
  • 1 cup pizza sauce or marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1/2 cup sliced pepperoni
  • 1 tsp Italian seasoning optional
  • 1 tbsp olive oil for cooking

Method
 

  1. Lay out 4 tortillas on a flat surface. Spread 2–3 tablespoons of pizza sauce evenly over each one.
  2. Sprinkle a generous layer of shredded mozzarella over the sauce.
  3. Add pepperoni slices on top and sprinkle with Italian seasoning if using.
  4. Top with another tortilla to create a sandwich-style quesadilla.
  5. Heat olive oil in a skillet over medium heat. Cook each quesadilla for 2–3 minutes per side until golden brown and the cheese is melted.
  6. Remove from heat, let cool slightly, then cut into wedges. Serve with extra pizza sauce for dipping.

Notes

Try adding sliced olives, mushrooms, or bell peppers for extra pizza flavor. For a crispier crust, lightly butter the outside of each tortilla before cooking.
