- Heat olive oil and butter in a large skillet over medium-high heat.
- Add the onion, bell pepper, and mushrooms. Sauté for 6–8 minutes until softened.
- Stir in the garlic and cook for 1 minute until fragrant, then transfer the vegetables to a plate.
- Add the thinly sliced steak to the skillet, season with salt and pepper, and cook for 3–4 minutes until browned.
- Return the sautéed vegetables to the skillet and mix with the steak.
- Add the Worcestershire sauce and cook for another 1–2 minutes to blend the flavors.
- Lay the provolone slices over the steak mixture and let them melt before stirring gently.
- Toast the hoagie rolls lightly, then fill each with the cheesesteak mixture.
- Add optional toppings if desired and serve warm.
