Ingredients
  

Cookie Dough
  • 2 1/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup unsalted butter softened
  • 3/4 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 box instant pistachio pudding mix 3.4 oz
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup white chocolate chips
  • 1 cup chopped pistachios unsalted
  • lemon zest zest of 1 lemon (optional)

Method
 

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. Whisk together the flour, baking soda, and salt in a medium bowl.
  3. Cream the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add the pistachio pudding mix and mix until fully combined.
  5. Beat in the eggs one at a time, then mix in the vanilla extract.
  6. Gradually add the dry ingredients to the wet mixture, mixing just until combined.
  7. Fold in the white chocolate chips, chopped pistachios, and optional lemon zest.
  8. Scoop tablespoon-sized dough balls onto prepared baking sheets, spacing 2 inches apart.
  9. Bake for 10–12 minutes, until edges are lightly golden and centers remain soft.
  10. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For extra green color, add a drop of green food coloring to the dough.
